Sourdough Sandwich Bread
Ingredients
- 1 Cup Warm Water
- 2 Tbs Honey
- 3 tsp Active Dry Yeast
- 4 Tbs Softened Butter
- 2 Cups Unbleached All-Purpose Flour
- 2 Cups Whole Wheat Flour
- 3/4 Tbs Salt
- 1 Cup Sourdough Discard
Instructions
- In a bowl, whisk together warm water, honey, and yeast. Let it sit at room temperature for about 5 minutes until it becomes foamy and bubbly. In the bowl of a stand mixer fitted with a dough hook, combine the yeast mixture, butter, flour, salt, and sourdough discard. Knead on low speed until the dough is smooth and elastic—this usually takes around 10 minutes but may take longer. You can also knead by hand if preferred. The dough should pull away from the sides of the bowl without sticking. To check if the gluten has developed properly for a soft and fluffy loaf, perform the windowpane test: take a small piece of dough and gently stretch it into a square. If it stretches thin enough to see through without tearing, it's ready.Transfer the dough to a greased bowl and cover with a lid, plastic wrap, or a towel. Let it rise in a warm spot (such as on top of the stove or refrigerator) for 1-2 hours, or until it has doubled in size.Meanwhile, grease a bread pan or line it with parchment paper.Once risen, roll the dough into a rectangle, then tightly roll it up, pinching the ends to seal. Place the dough into the prepared pan, seam side down. Cover with a towel and let it rise again for 30 minutes to an hour, until it doubles in size. For a golden crust, whisk an egg in a small bowl and lightly brush it over the top of the dough (optional).Preheat the oven to 375°F. Bake for 30- 45 minutes, or until the loaf is golden brown on top. I like to rub the top with butter while it is still hot.Allow the bread to cool completely before slicing or storing. Enjoy!
