- Preheat oven to 350F and line a baking sheet with parchment paper.
- In a bowl, whisk together butter, maple syrup, coconut sugar, egg, sourdough discard, and vanilla.
- In another bowl, combine oats, flour, baking soda, cinnamon, and salt.
- Stir dry ingredients into the wet ingredients until combined.
- Fold in your favorite add-ins.
- Scoop tablespoon-sized balls onto the baking sheet and gently flatten.
- Bake 10-12 minutes until edges are lightly golden.
- Let cool for a few minutes before moving to a cooling rack.
- For extra nutrition, add 2 T ground flaxseed or chia seeds.
