Ingredients
  

  • 1/2 Cup Sourdough Discard
  • 1/2 Cup Melted Coconut Oil or Butter
  • 1/3 Cup Maple Syrup or Raw Honey
  • 1/4 Cup Coconut Sugar
  • 1 Large Egg
  • 2 tsp Vanilla
  • 1 Cup Oats
  • 3/4 Cup Whole Wheat Flour
  • 1/2 tsp Baking Soda
  • 1 tsp cinnamon
  • 1/4 tsp Salt
  • 1/2 Cup Add-ins Dark Chocolate Chips, Raisins, Chopped Pecans or Walnuts, Shredded Coconut

Method
 

  1. Preheat oven to 350F and line a baking sheet with parchment paper.
  2. In a bowl, whisk together butter, maple syrup, coconut sugar, egg, sourdough discard, and vanilla.
  3. In another bowl, combine oats, flour, baking soda, cinnamon, and salt.
  4. Stir dry ingredients into the wet ingredients until combined.
  5. Fold in your favorite add-ins.
  6. Scoop tablespoon-sized balls onto the baking sheet and gently flatten.
  7. Bake 10-12 minutes until edges are lightly golden.
  8. Let cool for a few minutes before moving to a cooling rack.
  9. For extra nutrition, add 2 T ground flaxseed or chia seeds.
