Healthy Sourdough Discard Oatmeal Cookies

Ingredients

  • 1/2 Cup Sourdough Discard
  • 1/2 Cup Melted Coconut Oil or Butter
  • 1/3 Cup Maple Syrup or Raw Honey
  • 1/4 Cup Coconut Sugar
  • 1 Large Egg
  • 2 tsp Vanilla
  • 1 Cup Oats
  • 3/4 Cup Whole Wheat Flour
  • 1/2 tsp Baking Soda
  • 1 tsp cinnamon
  • 1/4 tsp Salt
  • 1/2 Cup Add-ins Dark Chocolate Chips, Raisins, Chopped Pecans or Walnuts, Shredded Coconut

Instructions

  • Preheat oven to 350F and line a baking sheet with parchment paper.
  • In a bowl, whisk together butter, maple syrup, coconut sugar, egg, sourdough discard, and vanilla.
  • In another bowl, combine oats, flour, baking soda, cinnamon, and salt.
  • Stir dry ingredients into the wet ingredients until combined.
  • Fold in your favorite add-ins.
  • Scoop tablespoon-sized balls onto the baking sheet and gently flatten.
  • Bake 10-12 minutes until edges are lightly golden.
  • Let cool for a few minutes before moving to a cooling rack.
  • For extra nutrition, add 2 T ground flaxseed or chia seeds.
