- 3 C Unbleached All-Purpose Flour
- 1 1/2 C Sugar
- 1 tsp Ground Cinnamon
- 1 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 3/4 C Avocado Oil
- 3 Lg Eggs
- 1 8oz Crushed Pineapple, Drained (Save Juice)
- 1 C Finely Grated Carrot
- 1 C Finely Grated Granny Smith Apple
- 1 C Chopped Pecans
- 1 C Golden Raisens, Chopped
Preheat oven to 350°
Spray 24 count mini muffin pan with non stick cooking spray.
In a large bowl, whisk together flour and next four ingredients.
Add oil and eggs, stirring just until combined.
Add pineapple and all remaining ingredients, stirring until combined. If batter is too thick, add a small amount of saved pineapple juice.
Spoon batter into prepared pans.
Bake for 18 to 22 minutes, or until a wooden pick inserted in center comes out clean.
Let cool in pans for 5 minutes.
Remove from pans and serve warm or at room temperature.
