Ingredients
3CUnbleached All-Purpose Flour
1 1/2CSugar
1tspGround Cinnamon
1 1/2tspBaking Soda
1/2tspSalt
3/4CAvocado Oil
3LgEggs
18ozCrushed Pineapple, Drained (Save Juice)
1CFinely Grated Carrot
1 CFinely Grated Granny Smith Apple
1CChopped Pecans
1CGolden Raisens, Chopped
Instructions
Preheat oven to 350°
Spray 24 count mini muffin pan with non stick cooking spray.
In a large bowl, whisk together flour and next four ingredients.
Add oil and eggs, stirring just until combined.
Add pineapple and all remaining ingredients, stirring until combined. If batter is too thick, add a small amount of saved pineapple juice.
Spoon batter into prepared pans.
Bake for 18 to 22 minutes, or until a wooden pick inserted in center comes out clean.
Let cool in pans for 5 minutes.
Remove from pans and serve warm or at room temperature.
