Equipment

  • 1 24 count mini muffin pan.

Ingredients
  

  • 3 C Unbleached All-Purpose Flour
  • 1 1/2 C Sugar
  • 1 tsp Ground Cinnamon
  • 1 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 3/4 C Avocado Oil
  • 3 Lg Eggs
  • 1 8oz Crushed Pineapple, Drained (Save Juice)
  • 1 C Finely Grated Carrot
  • 1 C Finely Grated Granny Smith Apple
  • 1 C Chopped Pecans
  • 1 C Golden Raisens, Chopped

Instructions
 

  • Preheat oven to 350°
  • Spray 24 count mini muffin pan with non stick cooking spray.
  • In a large bowl, whisk together flour and next four ingredients.
  • Add oil and eggs, stirring just until combined.
  • Add pineapple and all remaining ingredients, stirring until combined. If batter is too thick, add a small amount of saved pineapple juice.
  • Spoon batter into prepared pans.
  • Bake for 18 to 22 minutes, or until a wooden pick inserted in center comes out clean.
  • Let cool in pans for 5 minutes.
  • Remove from pans and serve warm or at room temperature.
