Healthy & Delicious Breakfast Muffins: Make-Ahead, Freezer-Friendly & Customizable

Do you ever struggle with what to fix for breakfast?? Please tell me I am not alone! Breakfast has always been a bit of a challenge in our home. Kyle has to leave early many mornings, and I want to make sure he has something filling, healthy, and—most importantly—portable. On most of the early mornings, I haven’t even had my coffee yet so I am usually not in the mood to cook a big breakfast. That’s why I love my go-to breakfast muffin recipe! It’s incredibly versatile, easy to whip up, and perfect for meal prepping. Plus, when I use my sourdough starter, it adds an extra boost of nutrition and flavor that makes these muffins even better.

Blueberry Lemon Muffins: A Bright & Fresh Start to the Day

One of my favorite combos is blueberry and lemon—the tartness of the lemon balances the sweetness of the blueberries perfectly. It’s like sunshine in muffin form!

Other Flavor Combinations

🥜 Chocolate & Peanut Butter: Add 2 tbsp peanut butter to the wet ingredients and mix in chocolate chips.

🍎 Apple Cinnamon: Swap the lemon zest for 1 tsp cinnamon and add diced apples.

🍌 Oats & Banana: Reduce the flour by ½ cup and replace it with oats. Mash 1 ripe banana into the wet ingredients.

🫐 Mixed Berry: You can use a combination of raspberries, blackberries, and blueberries.

Tips for the Best Breakfast Muffins:

Make it protein-packed – Add a scoop of protein powder or a handful of chopped nuts. ✅ Keep it moist – Don’t overmix the batter, and store muffins in an airtight container. ✅ Make ahead & freeze – Wrap individually and freeze for a quick breakfast option. ✅ Experiment & have fun! – Use different spices, extracts (like vanilla or almond), and toppings.

I love baking these muffins not just because they’re delicious and practical, but also because they feel like a little bit of love packed into a portable breakfast. Whether Kyle is rushing out the door or we’re enjoying a slow morning with coffee, these muffins are a staple in our home.
